I snack on them straight from the fridge, piled high on a plate with lunch, or scoop &#8217;em onto barbecue sandwiches for that perfect crunch.<\/p>\n\n\n\n<p>Here&#8217;s the recipe \u2014crispy, sweet, and full of summer:<\/p>\n\n\n\n<p>\ud83e\udd52 <strong>Amanda&#8217;s Freezer Pickles<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>7 cups sliced cucumbers<\/li>\n\n\n\n<li>1 cup sliced onion<\/li>\n\n\n\n<li>2 cups sugar <em>(or less, if you prefer &#8217;em tart like my husband)<\/em><\/li>\n\n\n\n<li>1 cup white vinegar<\/li>\n\n\n\n<li>2 tsp salt<\/li>\n\n\n\n<li>1 tsp celery seed<\/li>\n<\/ul>\n\n\n\n<p>\ud83d\udc49 Mix everything well and let it sit for <strong>6 hours<\/strong>.<br>After that, they\u2019re ready to eat\u2014or spoon them into freezer containers and pop them in the deep freeze.<br>They keep crisp and delicious for up to <strong>9 to 12 months<\/strong>.<\/p>\n\n\n\n<p>\ud83d\udca1 <em>Quick Tips:<\/em><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>You can leave the cucumber skins on or peel them\u2014totally your preference.<\/li>\n\n\n\n<li>We always did a batch of both!<\/li>\n\n\n\n<li>Easily doubled (or halved) depending on your garden haul.<\/li>\n<\/ul>\n\n\n\n<p>Whether you\u2019ve got a bumper crop or just love that old-fashioned Southern flavor, this recipe is a no-fuss way to preserve the taste of summer.
